The last part of a restaurant’s duct exhaust system usually sits where nobody in the kitchen looks: on the roof.

Every time the cookline runs, grease-laden air rises into the duct exhaust hood. The grease filters catch much of it, but some carries on through the plenum and the ductwork and reaches the rooftop exhaust fan, where it builds up on the fan and around its base. Cleaning only what can be seen from the kitchen leaves that end of the system untouched.

That’s why Allen’s Duct Systems treats the rooftop fan as part of the same exhaust system that starts over the cookline. On the roof, the fan is tilted back so the grease can be cleaned from the fan and the duct opening beneath it, then rinsed off before the fan is closed up again. Removing accessible grease buildup helps support the ongoing fire-safety maintenance of a commercial kitchen exhaust system.
