Duct Exhaust Cleaning for Quick-Service Kitchens

Quick-service kitchens cook fast and cook a lot, with fryers, griddles and flat-tops running through the day.

That steady cooking sends grease into the grease filters, and from there into the plenum and the connected ductwork. High-volume cooking loads the filters faster, and buildup around the filter tracks is common in busy kitchens. Allen’s Duct Systems cleans the grease filters and their tracks, the accessible plenum and ductwork, and the rooftop exhaust fan, following the whole connected exhaust path. Removing accessible grease buildup helps support the ongoing fire-safety maintenance of a commercial kitchen exhaust system. Allen’s offers scheduled cleaning, and emergency service is available 24/7. A free estimate starts with a call to Mrs. Allen at (917) 930-5887.

Why Grease Filter Fit Matters

Grease filters are made to sit snug in a row along the bottom of the duct exhaust hood, each one seated in its track.

When a filter is missing, warped, damaged or the wrong size, the row ends up with a gap or a loose fit, and washing that filter again won’t fix it. That’s when Allen’s Duct Systems replaces it. We review the filters, confirm which ones need replacing, measure the filter bank, and match the new filters’ size, quantity and orientation. Then we install them and check that each one fits, lines up and sits steady.

Replacement is its own service, separate from grease filter cleaning, so filters that are still in good shape are simply cleaned. You can read more about grease filter replacement here: https://allensductcleaning.com/services/restaurant-grease-filter-replacement/

What Full-System Kitchen Exhaust Cleaning Includes

Full-system kitchen exhaust cleaning follows the grease along the same path the air takes out of the kitchen.

It starts with protecting the cookline. Then the grease filters come out, and the duct exhaust hood and canopy, the accessible plenum behind the filters and the connected duct sections that can be reached are all cleaned. The rooftop exhaust fan at the end of the path is included too. Last comes reassembly, finishing and a final review, and a service sticker is placed. When Grease Builds Up Thick Inside the Duct Exhaust Hood

Not every kitchen exhaust system looks the same when we arrive. Some carry a light film of grease, and others have thick, dark layers built up on the inside walls of the duct exhaust hood and the plenum behind the filters.

Allen’s Duct Systems handles both in the same careful order. The cookline is protected first and the grease filters come out. Degreaser goes on, the thickest grease comes off, and accessible areas are washed with hot water. Where the layers are thickest, grease is also scraped off by hand. Duct Exhaust Cleaning for Commissary and Production Kitchens

Commissary and production kitchens often cook in volume for more than one location, a catering order or a delivery menu, and long cooking days put a lot of grease into the duct exhaust system.

Small Kitchens, Busy Ducts: Pizzerias, Delis and Cafés

A small kitchen can work as hard as a big one: a deli grill going from the morning rush, a café flat-top busy through lunch, a pizzeria fryer running late into the night.

Allen’s Duct Systems cleans duct exhaust systems for pizzerias, delis and cafés: the duct exhaust hood, the grease filters, the accessible plenum and ductwork, and the rooftop exhaust fan. Here is how we clean the filters: https://allensductcleaning.com/services/restaurant-grease-filter-cleaning/

Estimates are free, rates are competitive, and repeat cleanings can be booked on a schedule that suits your hours.

Clean Duct Exhaust for Hotel and Event Kitchens

Hotel and event kitchens tend to cook in big rushes — a banquet, a wedding, a conference lunch — and every one of those rushes loads the duct exhaust hood, the filters and the connected ductwork with grease.

Our crew cleans that whole connected path for these kitchens: the duct exhaust hood, the grease filters, the accessible plenum and ductwork, and the rooftop exhaust fan at the end of the line. Read more about full-system cleaning here: https://allensductcleaning.com/services/full-system-kitchen-exhaust-cleaning/

Because event kitchens don’t always run on a weekday schedule, weekend and emergency service are both part of how we work.

Why Replace Grease Filters?

Grease filters take a lot of heat and a lot of grease. Most can be cleaned and put back to work, but some reach a point where another wash won’t help: the frame is warped, the blades are damaged, or the filter no longer sits right in its track.

That’s when Allen’s Duct Systems replaces it. Our technicians review the filters, confirm which ones need replacing, measure the filter bank, and install new filters matched to the right size, number and orientation, then check that each one fits securely. Replacement filters are offered at competitive rates. To ask about your kitchen’s filters, call Mrs. Allen at (917) 930-5887.

The Plenum: The Space Right Behind Your Grease Filters

Pull a grease filter out of its track and you’ll see a chamber most diners never think about. That’s the plenum, and it connects the filter bank to the ductwork that carries exhaust up and out of the building. Grease that makes it past the filters can build up on its walls.

When Allen’s Duct Systems cleans a kitchen exhaust system, the plenum gets its own attention. With the filters out, our technicians clean the accessible interior surfaces of the plenum, the reachable exhaust opening, and the connected duct sections that can be reached through available access points.
